Milk is delivered from the milking machine to the milk tank using sterile tubing. It is usually cooled using a heat exchanger because the milk collected directly from the cow is warm. Tank sizes range from as little as 100 gallons to thousands of gallons, depending on the size of the dairy product and processing and shipping capabilities. It is temporarily stored in those tanks until it is transferred to refrigerated trucks for transport to processing and packaging plants.
